what's mac eating?

well, lately mac has turned into a picky eater, but definitely not as picky as me : ) he got jared's taste buds and adventure for food that is for sure.

we have had to find ways to disguise things in mac's food. we have to get creative and that is always fun especially when it is with food : )

so what is mac eating::

avocado blueberry pancakes topped with crushed walnuts
make normal pancake mix we use bisquick (but i left out the egg and added avocado)
1/2 avocado blended into batter (i used a egg beater)
add 1/2 cup blueberries to each pancake (if you ask mac he'd say the more blueberries the better)
cook on skillet
add crushed walnuts and a little lite syrup and ta da!! a more healthy pancake for the little man.


mac's favorite breakfast is blueberry pancakes in the morning especially when it is with grandma : )








and presto... we have a happy hungry little guy! 

another recipe we made up to hide some veggies in mac's dinner is::
carrot-pesto pasta
all you have to do is put basil, olive oil, garlic, pine nuts, parmesan and 1 small can carrots into a food processor and blend it up. i add the above ingredients to taste and the texture of my choosing... we put the pesto sauce over spinach ravioli (but i am sure it would taste delicious with anything)

mac just gobbles this up.... he loves his pasta : )

what i love about spring: 

waking up to birds singing in the morning

cherry blossom trees in bloom

daylight savings :: spring forward it is totally worth it.

bbq's

open toed shoes

sleeping with the windows open

the smell of fresh cut grass

baseball games

evening walks

it's not too cold and it's not too hot

sunshine

white clouds and blue sky

blueberry muffins

theses are some delicious blueberry muffins. mac loves everything blueberry just like his grandma linda.

the recipe is from the hummingbird bakery cookbook which i love. every recipe i have made from this cookbook has been so tasty.

ingredients
2 3/4 cups all-purpose flour
1 3/4 cup sugar
1 teaspoon salt
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cup buttermilk
1 egg
1/2 teaspoon pure vanilla extract
5 tablespoons unsalted butter, melted
1 pint blueberries

makes 12 tasty muffins

1. preheat oven to 325F
2. put the flour, sugar, salt, baking powder and baking soda in an electric mixer with paddle attachment and beat on slow speed.
3. put the buttermilk, egg and vanilla into a bowl and mix to combine. slowly pour into the flour mixture and beat until just incorporated.
4. pour in the melted butter and beat until the butters has just been incorporated, then turn the mixer up to medium speed and beat until the dough is even and smooth.
5. fold in blueberries until dispersed.
6. spoon batter into paper cases until 2/3 full. i use an ice cream scoop to spoon into paper cases.
7. cook in oven  for 25 minutes

i think the hummingbird bakery cookbook is worth buying and i do not say that about a lot of cookbooks. it would also make a great gift for those sweet tooth's. i have made at least 4 recipes from this cookbook and have loved them all. cheers!
